Foeder Aged - Disorder of the Monk

Some beers are brewed. This one was refined.

Disorder of the Monk is our first-ever Foeder-Aged Berliner Weisse. A beer shaped by shaped by oak, cultures, and time. Straw yellow, crystal clear, and softly effervescent, it opens with aromas of bread crust, apple cider, and subtle earthy tones that reflect its time in wood.

Dry and refreshing with natural carbonation, this beer balances bright acidity with a soft, rounded body. Traditionally served in Berlin “mit Schuss” (with a shot of syrup) to soften the tart acidity

Patiently crafted. Wonderfully balanced. Released when the timing felt right.

Disorder of the Monk

Disorder of the Monk pours straw yellow and crystal clear, with a soft white head that disappears cleanly. The aroma opens with apple cider, fresh bread, and a faint leathery earthiness. Light-bodied and softly carbonated, it sips crisp and refreshing. Ready to enjoy on its own, or with a traditional splash of syrup for added colour and lift.

Bright. Restrained. Meant to carry tradition.

This isn’t just a new beer, it’s a different kind of expression.
Crafted with intention. Shaped by patience. Finished by the foeder.

Available exclusively in the taproom.

Disorder of the Monk

A Study in Spontaneity and Oak

Disorder of the Monk was never meant to follow the rules. It was brewed with intention—then handed off to oak, time, and the unexpected. A classic Berliner Weisse, quietly transformed in our foeder.

This is where spontaneity shapes structure. Where tradition loosens its collar and breathes a little deeper.

Built for those who appreciate restraint. Who see creativity not in control, but in letting go.

That’s Disorder.
